Sherry vinegar is the ultimate aroma in the world of gastronomy. Because of its extraordinary quality, its concentrated aromatics and its enormous versatility, it has become an irreplaceable condiment - not only in gourmet cuisine. Just like a good perfume, it takes no more than a few drops of Sherry vinegar to turn every dish into an amazing culinary sensation. In addition to this potential comes the depth of character and nuances that reveal its distinctive origin and crafted elaboration.

The history of Sherry vinegar is closely related to that of the noble wine from which it comes. Today the vinegar is practically as famous as the Sherry itself. And we owe this in large part to the man whose bodega we're going to visit: Don Antonio Páez Lobato, the "King of Vinegar" from Jerez.
This unique private tour takes us to the oldest bodega for Sherry vinegar, the original, so to speak. Because Don Antonio was the first to recognize the value of this "by-product" of Sherry production and dared to use it commercially. His Solera barrels are correspondingly old. Here you will learn first-hand everything about the production of Sherry vinegar. Of course also in practice, because we will taste different types of vinegar on-site.
But this traditional family-run winery is not only special in this aspect. In addition to the fantastic vinegar, we will also get to know the other two business areas that complete the image of the innovative: their popular table wines from the region, type "Tierra de Cádiz", as well as "Sherry Cask", sherry barrels for whisky producers around the world.
Finally, we enjoy wine and tapas in the typical Andalusian patio of the bodega.
